1/3 cup red wine vinegar
1/3 cup light olive oil
1 small onion, sliced and separated
1 teaspoon salt
2 teaspoons dried parsley
1 teaspoon prepared mustard
1 Tablespoon brown sugar or sugar substitute
12 ounces mushroom caps
Bring first 7 ingredients to a boil. Add mushroom caps and simmer 5 minutes. Chill overnight.
