Some days you’ve only got one avocado and one person you’re willing to share it with. This quick, fresh guacamole is perfect for those moments. It makes just enough for two — everybody else, keep your hands off my guacamole. And yes, it’s tomato‑free, because guacamole is at its best when the avocado doesn’t have to fight for attention.
1 ripe avocado
2 tablespoons finely chopped onion or 1 tablespoon dried onion, reconstituted and drained
2 teaspoons fresh cilantro or 1 teaspoon dried cilantro
1 teaspoon lime juice
1/8 to 1/4 teaspoon salt, to taste
Peel the avocado and mash it with a fork on a cutting mat until it reaches your preferred texture. Transfer the mashed avocado to a small bowl — just big enough to hold one avocado’s worth of goodness.
Add the onion (fresh or reconstituted dried), cilantro, lime juice, and salt. Stir gently to combine. Taste and adjust the salt or lime juice if needed.
