1 diced onion
1 large bag of tortilla chips (I save the broken chips from several bags for this dish)
Grated cheddar cheese
28 ounce can of red or green enchilada sauce
small can of sliced olives
Preheat oven to 400º. Brown turkey and onion, then drain. Layer 1/2 tortilla chips (push them down into the dish), 1/2 meat/onion, 1/2 sauce, a layer of cheese in 9 x 13 pan. Repeat with another layer then top with olives. Bake 20 minutes until cheese is melted. This is one of those dishes that is even better the next day, or something you can assemble in the morning and bake for dinner.
