1 c butter
2 c oatmeal
1 c brown sugar
2 eggs
1 c sugar
2 c Rice Krispies®
2 c flour
1 c walnuts
1 tsp vanilla
1/2 c coconut
1/2 tsp salt
1/2 tsp baking powder
1 tsp baking soda
Beat butter until fluffy. Add eggs and sugars and beat. Add oatmeal, nuts, vanilla, coconut, salt, baking powder and soda. Stir well. Stir in flour. At the last minute stir in the Rice Krispies. (They stay crunchier that way.) Bake at 350º for 12-14 minutes. May take more or less, so watch the first batch. Makes 60. 95 calories apiece, 4.5 grams fat
Update: I made these for a family gathering this weekend and discovered that they're not nearly as tasty when you forget to add the oatmeal!
