1 pound Italian sausage - turkey if you can find it.
2 Tbsp Olive oil
3 med Yukon Gold potatoes, diced
2 med onions, diced
6 cloves garlic
2 bay leaves
salt and pepper
1 can garbanzo beans, drained
1/2 lb fresh sliced mushrooms
1 large can petite diced tomatoes
1 qt chicken broth
12 oz V-8® vegetable juice
1 pound spinach leaves
Remove casings from sausage and cut into 1 inch pieces. Form into meatballs. Put oil in soup pot and brown sausage in it. Add the rest of the ingredients except the spinach and bring to a boil. When potatoes and onions are tender, add spinach and cover for 3 minutes. Stir and serve with a sprinkling of shredded parmesan cheese.
