My first reaction to this recipe wasn't good. However, since I had the ingredients on hand, I decided to give it a try. I can't believe what a hit it was. Yummy!
2 tablespoons olive oil
1/2 cup chopped onion 1 cup chopped red or green bell pepper - Hint: I chop and freeze a couple of these for recipes.
1 clove garlic
1 pound ground turkey (or ground beef or pork)
2 (14.5 ounce) cans peeled and diced tomatoes - I like petite diced
1 (15 ounce) can pureed pumpkin
1 (15 ounce) can tomato sauce
1 (15 ounce) can kidney beans, drained and rinsed
1 (4 ounce) can diced green chilies
1 (15 ounce) can whole kernel corn
2 tablespoon chili powder
2 teaspoons ground cumin
2 teaspoond salt
1/2 teaspoon ground black pepper
A few shakes of red pepper flakes -- or as much heat as you like.
In a 6 qt saucepan over medium-high heat brown meat, onion and green pepper.
Add the rest of the ingredients. Heat slowly and let simmer covered for a while on low, stirring occasionally, until good and hot. Serve with a handful of shredded cheddar and a dollop of sour cream.
For a crowd, four times this recipe will fit into a 12 quart pot . . . barely!
Corn bread muffins make an excellent side. Hint: Add 1/2 c of corn or cheese to the muffin mix for a different flavor and texture.
