Potato Leek Soup

Potato Leek Soup
2 Cups water
1/2 teaspoon salt
2 small grated onions
2 thinly sliced celery ribs
2 Tablespoons chicken base
1/2 cup chopped leaks
1 cup milk
2 1/2 cups Potato Buds (dry mashed potatoes)
3 cups milk
1 cup half and half

Mix water, salt, onion, celery and chicken base in 3 quart saucepan. Heat to boiling; reduce heat. Cover and simmer 10 minutes. Remove from heat and add 1 cup milk. Stir in potatoes and whip with fork until fluffy. Gradually stir in 3 cups milk. Heat just to boiling. Cover. Just before serving, stir in half and half. Sprinkle with chives. 8-12 servings.

Hint:  Leaks aren't something that I buy every day.  However, I usually have a bag in the freezer with chopped leftovers from leaks that I buy for clam chowder.  I do that with onions and green peppers as well.
